Pumpkin Butterscotch Cookies

I'm not big on sweets but these are nothing short of pure awesomeness. Thank you, Virginia Vanderford for the recipe!

Ingredients :
  • 1/2 cup butter
  • 1 cup white sugar
  • 1 cup pumpkin puree
  • 1 teaspoon of vanilla extract
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups butterscotch pieces
Preheat the oven to 350 degrees and grease a cookie sheet. Cream butter and sugar. Stir in the pumpkin and vanilla. Once stirred and smooth, add the flour, salt, baking soda, baking powder and cinnamon. Mix in butterscotch. Using a spoon, drop about 1 teaspoon full of mixture for each cookie on the greased cookie sheet. Bake 8-10 minutes and they're done!
